1.Mashing Instrumentality

Whiskey begins with mashing which involves crushing grains such as barley, corn, rye or wheat then mixing them with hot water so that they can convert starch into fermentable sugars. Most common components in mashing are mash tun i.e., a big container where water and grains are mixed. This mixture called mash is stirred and heated to allow for enzymatic break down of starches. 2.Fermenting Vessels

After mashing, wort i.e., sugary liquid formed needs transfer into fermenting vessels. These can be made from wood; stainless steel or copper each bringing different flavors into whiskey. Yeast is added to start fermentation where sugar turns into alcohol producing various congeners which give flavor. Generally, yeast activity has to be maintained by sustaining temperature during fermentation for some few days thus obtaining good flavour.

3.Distilling Apparatus

The real heart of whisky production lies within the distilling apparatus composed mainly of pot stills or column stills.Pot stills are usually made out copper – traditional material preferred for making full-flavoured spirits.Pot stills comprise a large pot where fermented wash is heated.As wash boils alcohol vapour rises up through swan neck before passing through condenser whereby they cool back down and collect as liquids.

Column stills also known as continuous stills are more modern and efficient.They have tall columns divided into sections/plates. The wash is placed at the top and steam enters from the bottom As heat rises, it vaporizes the alcohol which then condenses on plates. This multiple distillation process yields a purer spirit often used for making lighter whiskeys.

4.Condensers

Condensers are critical because they capture alcoholic vapours and return them to liquid state. In pot stills, vapor travels through a coil or tube immersed in cold water where it cools and becomes liquid. In column stills however, condensers are included in the column instead. The choice of a condenser determines the character of the final product with copper being preferable since it removes sulphur compounds thus leaving cleaner taste.


5.Spirit Safe

Spirits safe is where distilled spirits are collected; this is a locked place which distillers use to ensure that their products meet the desired quality standards.This is where the distiller separates heads (unwanted compounds), hearts (desired spirit) and tails (heavy compounds).Through careful separation, only best parts of distillate undergo maturation.
